It is, IMHO, simply to avoid sync conflicts... a bit like with Exchange sync with computers or WinMobile devices: the Exchange server IS the mothership, so every conflict is resolved by giving priority to data that live on the Exchange "cloud"... So, easy to have cloud AND iTunes sync at the same time? No, but feasible, of course... I haven't found a simple solution to that yet.
